I love cauliflower!
You can make a good dish of cauliflower in many ways and my favourite is to cook it in the oven. Our rented house in Piedmont is just near all the best truffle places in the whole world. So, I had to try this!
A good quality truffle salsa, and the rest of the ingredients should find from your pantry.
A well pre-heated oven to 220 °C.
3 tbsp good olive oil
2-3 tbsp truffle salsa
1 tsp demerara sugar (brown sugar)
Cut the cauliflower in 2 cm thick slices.
Place the cauliflower on a baking sheet.
Brush both sides with the truffle mixture.
Sprinkle with Parmesan cheese as much as you prefer.
Grill the cauliflower 5 minutes/side until golden brown.
Drizzle on top some truffle oil and Parmesan cheese.
You can also enjoy the cauliflower cold the next day, the taste will be more intense.
